Gutti Vankaya or Stuffed Eggplant is very famous Andhra recipe....And has unique flavour that makes Eggplant the king of Vegetables. There are lot of variations in preparing the stuffing. Here i am staring with Koora kaaram( mixture of lentils and red chilli)
Ingredients:
Baby Eggplant
Oil - 2 or 3 tbsp
For stuffing:
Chana Dal - 2 tbsp
Urad dal - 2 tbsp
Mustard seeds - 1
Methi seeds - 1 tsp
Coriander seeds - 2 tbsp
Tamarind - Small lemon size
Red Chilli Whole - 10-15 number

Procedure:
Wash and wipe the Eggplant, and set aside.
Take a pan and dry roast red chilli till they turn little brown and set aside.
Dry roast Mustard seeds till you get nice aroma and set aside.
Now add 1 tsp of oil,add chana dal , urad dal and methi seeds, fry till they turn into little brown.
Finally add chopped coriander leaves and fry for 2 min, then add hing and let it cool down to room temperature, and then put them in a blender, add tamarind, salt and make into a coarse powder.
Make slits to eggplant in + shape with out cutting stem and stuff this mixture.
Take a wide pan, add 1 tbsp of oil and arrange the stuffed eggplants and cook for 5 min on high flame. In the middle using a fork turn them to the other side carefully.
Now turn the flame to medium and cover with lid and cook for 10 min.
By this time egg-plants will be little soft. Remove the lid, and Use fork to turn them to other side , sprinkle little oil (if required) , salt and roast them nicely on slow flame for almost 30 min.Now finally sprinkle little more powder over top of the egg plants and coo for another 2 min and switch off the stove.
Serve with Hot Rice.
