Navaratan korma is nothing but korma, made of 9 main ingredients. They might be vegetables, dry fruits, regular fruits or spices. Usually they use some vegetables likee potato, carrot, beans and dry fruits like cashew, raisins, pistachio, almonds and fruits like pineapple, pomegranate and other spices like onion, whole garam masla, some pepper and finally topped with some cream. There is no limit to the number of ingredients based on our taste, but not less than 9.
Navaratn korma, we can say it as, a very famous mild mixed vegetable korma. You can even increase the spice level based on your taste by adding green chilli/ pepper powder.
Here is the simple and quick version of Navaratan korma.
Ingredients:
Potato – 1 big (peeled and cubed)
Carrot – 2 or 3 (peeled and cut them into small pieces)
Beans – 10 (cut into small pieces)
Cauliflower – few florets
Green peas – hand full
Onion – 1 small (chopped)
Cashew nuts – 6 or 7
Raisins – 1 tsp
Green chilli – 2 or 3
Cumin seeds – ¼ tsp
Pepper powder – as per taste
Whole garam masala – 2 clove, 1 inch cinnamon, 2 green cardamoms, 4 peppercorns
Salt – to taste
Sugar – ½ tsp
Oil/ butter – 1 tbsp
Cream – small cup (optional)
Procedure:
Wash and cut all veggies, and add green peas cook them till they are tender with little salt and set aside.
Now take ½ a cup of water, bring it to boil, then add chopped onion, whole garam masla, cashew nuts and cook till they are soft. Let it cool down and make into a fine paste.
Now take a kadai, add oil or butter, then add oil, when it is hot enough add cumin seeds, the green chilli and sauté for 30 sec.,
Now add onion-cashew paste, turmeric mix well and sauté it for a while till oil oozes out the pan.
Now add vegetable stock/ Onion-cashew boiled water/ plain water, salt, sugar and mix well, and bring it to a boil.
Now add all veggies, raisins and other dry fruits give a nice mix, and bring it to a boil.
Now add pepper powder to your taste, and also add cream (if using), simmer it for 2 min and switch off the stove.
Serve hot with Chapathi/ Cumin rice.

Apium graveolens is a plant species in the family Apiaceae commonly known as celery
do u know how to use this celery? I tried to make a curry but its not so tasty. Í mixed that celery with onions and fried in a pan with olive oil.
Please suggest me a better way to cook them
