Snake Gourd in Thick Yogurt
Ingredients:
Snake Gourd
Yogurt - 1 cup
Water - 1/4 cupTurmeric - 1 tsp
Mustard seeds - 1 tsp
Methi seeds- 1/4 tsp
Urad dal - 1/2 tsp
Red chilli - 2 or 3
Green Chilli - 2 Number
Curry Leaves
Hing
Salt
Oil
Procedure:
Wash, clean and cut the snake gourd into small pieces.
Take a vessel, add some water, snake gourd, turmeric, salt and cook till they are almost done. Drain the water and set aside.
Now take a pan, add oil, when it i hot add red chilli, mustard seeds and when they crackle, add
methi seeds and urad dal and fry for 2min then add greenchilli, curry leaves and hing.
Now add Snake gourd to the pan and fry for few min on medium flame.
In the mean time take a bowl, add yogurt, water and beat it well, then add salt and turmeric.
Now add the snake guard mixture to the yogurt and mix well.
Serve with Rice.

Majjiga Pulusu ( Buttermilk Stew)
Ingredients:
Yogurt - 1 cup
Bottle gourd
Onion - 1 small
Spinach - 1/2 cup
Tomato - 1 small
Egg Plant - 2 number ( optional)
Okra - 2 number ( optional)
Turmeric
Water
Oil - 1 tsp
For making Masala
Chana Dal - 1 tbsp
Raw Rice - 1/2 tbsp
Mustard seeds - 1/2 tbsp
Ginger - small piece
Green chilli - 3 number
Red Chilli dry - 2 number
For Tampering:
Mustard seeds - 1/2 tsp
Hing
Curry Leaves
Procedure:
Cut all Veggies and add water and half cook all the veggies except tomato, with little salt and turmeric. Drain the water and set aside.
In blender put all the ingredients for masala and make into a fine paste.
In a separate bowl, add yogurt,water and make into thick butter milk. Add the grounded masala paste, turmeric to the buttermilk,mix well and set aside.
Put a vessel on stove, add Oil, when it is hot add mustard seeds, when they crackle add curry leaves, hing and fry for 10 sec then add tomato and cook for 2 min then add half cooked veggies and fry for 5 min.
Now add Buttermilk, adjust salt and cook till all veggies are well cooked on medium flame.
Finally add chopped coriander and switch off the stove.
Serve Hot with Rice.
Note:
If you want you can thicken the Pulusu, Take little water, add 1 tsp of rice flour, mix it with out any lumps, add this to pulusu and cook for another 5 min.

Mukkala Pulusu ( Sweet Sambar)
Cut Veggies:
Bottle guard - 1/2 cup
Sweet Pumpkin - 1/2 cup
Sweet Potato - 1/4 cup
Carrot - 1/4 cup
Zucchini - 1/4 cup
Onion - half of the onion
Tomato - 1/2 cup
Drum sticks - 4 number
Tamarind juice - 1/2 cup
Jagary - lemon size or 2 tbsp of powder
Sambar powder - 1 tsp
Red chilli powder - 1/2 tsp
Salt - to taste
Turmeric - 1/4 tsp
Rice Flour - 1 tsp
Water
For tampering:
Oil - 1 tbsp
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Red chilli Whole - 2 number
Hing
Curry Leaves
Procedure:
Wash and cut all veggies....add 4-5 cups of water, little salt and turmeric and put on medium flame.
Cover it with a lid, as shown in the picture. Let it cook for 10 min and then add tamarind juice, jaggery, Sambar powder and cook till veggies are almost done. And put another pan, add oil, red chilli, mustard seeds, cumin seeds, curry leaves and hing.
Add this tampering mixture to pulusu...adjust salt, add red chilli powder and cook for another 5 min.
Mix 1 tsp of rice flour with water and pour the water into pulusu and cook for another 5 min.
Note:
We can use any set of veggies....like we can add egg-plant, Lady's finger, radish, beet- root etc.
and we can also add boiled toor dal.

Menthi Majjiga( Buttermilk Rasam)
Ingredients:
Buttermilk- 2 cups
Turmeric - 1/4 tsp
Salt -to taste
Chopped Onion - 1/2 cup
Chopped Tomato - 1/4 cup
Green chilli - 3 number
Mustard seeds - 1/4 tsp
Jeera - 1/4 tsp
Red Chilli - 2 number
Curry Leaves
Chopped Coriander
Procedure:
Take a cup of yogurt,beat it well and add 1 cup of water and mix well.
Now add little Turmeric, Salt and 2 or 3 curry leaves and set aside.
Take a pan, add oil to it and when it is hot enough, add Red Chilli, Jeera and mustard seeds, when they crackle add curry leaves, Green chilli and little hing.
Now add onions, and tomato and fry till onions are soft. And then add chopped coriander.
Finally add this mixture into buttermilk,mix well and serve.
