Lemon Rice



Ingredients:

Cooked Rice - 2 cups
Peanuts - 2 tbsp
Cashew Nuts - 2 tbsp
Chana Dal - 1 tbsp
Urad dal - 1 tbsp
Mustard seeds - 1/2 tbsp
Red Chilli - 2 or 3
Green Chilli - 10 Number
Ginger - small piece
Curry Leaves
Hing
Lemon juice - 1/2 cup
Oil
Salt

Procedure:

Cook Rice as normal like cooking for tamarind rice and let it cool down.

Take a Pan, add oil, when it is hot add peanuts and fry till they are half done, then add chana dal, red chilli, and fry for 2 min., then add urad dal, cashew nuts and fry till they turn little brown, then add mustard seeds and ginger. when they start spluttering add greenchilli and curry leaves and fry for 2 or 3 min. then add little turmeric and mix well.



Now add lemon juice, little salt to the pan and immediately switch off the stove and mix well.


Now add Rice to the pan, adjust salt and mix well.




Lemon Rice is ready to serve.

Snake Gourd in Thick Yogurt

Snake Gourd in Thick Yogurt/ Potlakaya Perugu Pachadi



Ingredients:

Snake Gourd
Yogurt - 1 cup
Water - 1/4 cup
Turmeric - 1 tsp
Mustard seeds - 1 tsp
Methi seeds- 1/4 tsp
Urad dal - 1/2 tsp
Red chilli - 2 or 3
Green Chilli - 2 Number
Curry Leaves
Hing
Salt

Oil

Procedure:

Wash, clean and cut the snake gourd into small pieces.


Take a vessel, add some water, snake gourd, turmeric, salt and cook till they are almost done. Drain the water and set aside.


Now take a pan, add oil, when it i hot add red chilli, mustard seeds and when they crackle, add
methi seeds and urad dal and fry for 2min then add greenchilli, curry leaves and hing.




Now add Snake gourd to the pan and fry for few min on medium flame.


In the mean time take a bowl, add yogurt, water and beat it well, then add salt and turmeric.




Now add the snake guard mixture to the yogurt and mix well.


Serve with Rice.

Masala Vada




Ingredients:

Chana Dal - 1 cup
Onion - 1 small
Curry Leaves
Green chilli
Clove - 3 or 4
Cinnamon - Small piece
Salt
Oil - For deep fry
Water - To soak the Dal
Procedure:

Soak the Chana Dal for 4 to 6 hours.


Drain the water Completely and put it in a blender with very little water, Green chilli,salt, clove, Cinnamon and make it into a very thick batter.



Now add chopped Onion, and few Curryleaves, adjust salt and mix well.


Now using your palm, make the batter into small patties/ vadas by greasing your palm with little oil.


Deep fry till they turn into golden brown.



Serve Hot with Ketchup/ Ginger Chutney.
