Chinese Fried Rice




Ingredients:

Cooked Rice - 2 cups

Carrot
Beans
Onion
Capsicum/ Bell pepper
Spring Onion
Cabbage (optional)
Green Chilli
Chopped Garlic
Chopped Ginger
Pepper Powder
Soy Sauce
Red chilli Sauce/ Chilli Paste
Salt
Sesame oil

Procedure:

Cook the rice and set aside.
Cut all veggies into small pieces.

Take a cooking Vessel, add oil and when it is hot add Cumin seeds(optional), when they splutter add chopped ginger and chopped garlic and fry for one min on medium-high flame.

Now add Green chilli, Carrots, beans and fry for 3 min.


Now add Capsicum and fry for another 3 or 4 min. Don't over cook the veggies...they should remain little crunchy.

Now add Onions and Cabbage( here i am not adding cabbage, but it goes well with this recipe) and mix well and fry for another 3 min.

Now add Pepper powder and mix well.

Now add Soy Sauce, Recd chilli sauce, little vinegar, mix well and fry for another 2 min.





Now add cooked rice and mix well.



Finally adjust salt, and add some chopped spring onion and switch off the stove.


Serve hot with some sauce.



Note:

Sesame oil best suits for any kind of Indo-Chinese preparation or you could use any oil.

Always cook Indo-chinese preparations on Medium-high to High flame, but ensure that ingredients are not burnt while cooking.
