Sambar

INGREDIENTS:


Toordal : 1/2 cup
Sambar powder : 2 tbsp
Salt
Red Chilli Powder
jaggery/sugar :little amount
Tamarind juice/paste
Coriander leaves
Coconut powder

For tadaka:

Curry leaves
Urad Dal
Cumin seeds
Mustard seeds
Red Chilly Whole
Garlic cloves
Hing
Turmeric:1/4tsp
Oil : 2tbsp

Veggies(you can add any combination of veggies)i added
Sweet Potato
Cut drumstick
Onion(cut into long slices)
Carrot
Potato
Tomato

you can add Radish, Ladies finger, Egg Plant, Sweet Pumpkin, Bottle Gourd etc.





Procedure:

1.Boil 1/2 cup of toor dal by adding 1 cup of water in a pressure cooker for 3 whistles and set aside.



2.Put a heavy bottomed vessel, and add oil to it. when it is hot enough add urad dal, cumin seeds, mustered seeds, curryleaves, red chilli whole and hing. fry for 2 min. now add crushed garlic,turmeric and fry for another 2 min.



3.Now add veggies one by one(add those veggies which need more time to cook first) and fry them for 5 min
example: Add Potato,Carrot,Sweet Potato, Drumsticks, first and then bendi, egg plant,onions and tomato

4.Now add Tamarind Juice and let it cook for 3 more min.,then add boiled and smashed toordal and little water and cook another 3min


5.Now add water according to which consistency you want, then add Sambar Powder,little amount of sugar/jaggery.


6.Adjust salt, and redchilli powder.

7.Let it cook for 20min on medium flame and when it is done...add chopped coriander leaves and dried/fresh coconut powder.

Serve Hot with Rice and Chips.
