Puri with Potato Curry

Recipe Source: My Mom

Ingredients:

For making Puri:

Wheat flour
sooji(use very little amount)
Salt
Water

For Puri masala:

Potato- 2 number big size
Onions - 1 medium
Green Chilli - 4 number
Ginger - small piece
Chana dal - 1/2 tsp
Urad dal - 1/2 tsp
Mustard seeds - 1/2 tsp
Curry leaves
Red Chilli - 2 number






Procedure:

Make the dough with flour, salt, sooji and water and knead to make a tight dough.
cover with a paper towel for 15 min. In the meantime boil the potato,drain the water and set aside.

Take a pan add 2 tbsp oil, when it is hot enough add Red Chilli , Chana dal, Urad dal, and fry for 2 min then add Mustard seeds, when they crackle add Greenchilli, Ginger, and curry leaves and fry for 2min. And then add Onions and fry till they are soft.


Now add Boiled Potato, Mix well and let it Cook for another 5min on medium flame.



In a bowl, take 1 tbsp of besan flour, mix it in water with out any lumps and add to curry.



Add some more water to get the consistency you want.


Cook it till the rawness of flour goes away and switch off the stove.

Now Take the dough and kneed it for some time and divide it into small equal portions.


Just brush them with little oil, so that you don't need any flour while rolling them, and even you can put them together on same paper with out sticking to each other.

Deep fry them in hot Oil. slightly Press the puris while frying to get puffed.




Once it i s puffed turn the puri other side and fry. When it is done on both the sides take out puri on to Paper towel.

Repeat the process for all puries and serve Hot.

hey valli.....

i want to know if olive oil tastes good instead of sunflower or gingelly....as its difficult to find sunflower or gingelly oil here in aalborg....
