Tomato Rice



Ingredients:


Tomato - 3 Number
Rice - 1 cup
Water - 2 cups
Chana Dal - 1 tbsp
Urad dal - 1 tbsp
Mustard seeds - 1/2 tbsp
Hing
Cashew Nuts
Chopped Ginger
Green Chilli - 4 number
Red Chilli - 2 number
Chopped Onion - 1/4 cup
Red Chilli powder - 1 tsp
Garam masala - 1/4 tsp (optional)
Curry leaves
Chopped Coriander Leaves
Oil/ Ghee - 2 tbsp

Procedure:

Wash and cut the tomato, green chilli, ginger, and Onion.


Take a Vessel, add Oil when it is hot add slit red chilli, Chana dal and fry for 2 min, then add urad dal and fry for 1 more min then add Mustard seeds.


When they crackle add cashew nuts and fry till they are golden brown.


Add Curry leaves, Green chilli and coriander leaves and fry for 2 min then add Onion and fry till they are not brown but soft by adding little salt.



Now add cubed tomato, add salt mix well,cover with lid cook till they are soft.


Add redchilli powder and Garam masala and mix well.



Add rice and mix well.



Adjust salt and serve hot.

Vegetable Pulav








Ingredients:

Rice - 2 cups
Water - 4 cups
Whole Garam masala ( clove, cinnamon, bay leaves, Mace, pepper corn, green cardamom)
Potato - 1
Carrot - 1
Cauliflower
Green peas
Beans
Chopped Onion - 1/4 cup
Green Chilli - 3 number
Ginger Garlic paste - 1 tsp
Garam masala - 1/2 tsp
Oil - 4 tbsp
Chopped Coriander
Chopped Mint

Procedure:

Wash and soak the rice in 4 cups of water for 30 min.




Take a pressure cooker, add Oil, when it is hot add whole garam masala, and shajeera and fry for a while.




Add onions and fry for 1 min then add ginger garlic paste and fry till the rawness goes away.

Add Potatoes and fry for 1 min then add carrot, beans,green peas and fry for another 3 min then add cauliflower and fry till all the veggies are soft.

Now add Rice along with water and mix well.

Add garam masala, Chopped mint, Chopped Coriander, adjust salt and mix well.


Close the lid, and cook for 1 or 2 whistle.

Open the lid 10min after switch off the stove, mix well and serve hot with raita.


Utappam

Ingredients:

Idly batter
Finely chopped Onion - 1 small
Grated Carrot - 1/2 cup
Chopped Green Chilli - 2 number
Salt - to taste
Chopped Coriander Leaves
Oil

Procedure:

Take idly batter and add salt according to your taste.


Put a Pan, grease with oil and pour the batter.





Sprinkle Green chilli, Onion, Carrot on top of the batter and put little oil on top of the veggies and little oil around the batter.



Cover it with lid by leaving small space for free flow of air.



Check in between, when it is done on one side turn the other side and cook for another 10 min on low flame.


Serve Hot with Coconut Chutney.

Tomato Chutney - 1

Ingredients:

Tomato - 2 number
Green Chilli - 3 number
Red Chilli - 2 Number
Chana dal - 1 tsp
Urad dal - 1 tsp
Mustard seeds - 1/2 tsp
Methi seeds - 1/4 tsp
Hing
Chopped coriander



Procedure:

Wash and cut the tomatoes into 1 inch pieces. Add 1 tsp of oil to a frying pan, add little salt mix well, cover it with lid and cook till they are soft.




Remove the lid, mash up tomatoes little bit with spoon and cook further till all the moisture evaporates.


Switch off the stove and let it cool down to room temperature.
Take a pan, add oil, when it is hot add red chilli, chana dal, urad dal and fry for 3min, then add mustard seeds, when they crackle add hing,green chilli and fry for another 2 min then add chopped coriander and switch off the stove and let it cool down.



Put this mixture in a blender, make into a coarse powder.


Now take this out into a separate bowl and add mashed tomato, adjust salt and mix well.



Serve with Hot rice and Ghee.

Majjiga Pulusu ( Buttermilk Stew)







Ingredients:

Yogurt - 1 cup
Bottle gourd
Onion - 1 small
Spinach - 1/2 cup
Tomato - 1 small
Egg Plant - 2 number ( optional)
Okra - 2 number ( optional)
Turmeric
Water
Oil - 1 tsp

For making Masala

Chana Dal - 1 tbsp
Raw Rice - 1/2 tbsp
Mustard seeds - 1/2 tbsp
Ginger - small piece
Green chilli - 3 number
Red Chilli dry - 2 number

For Tampering:

Mustard seeds - 1/2 tsp
Hing
Curry Leaves

Procedure:

Cut all Veggies and add water and half cook all the veggies except tomato, with little salt and turmeric. Drain the water and set aside.



In blender put all the ingredients for masala and make into a fine paste.



In a separate bowl, add yogurt,water and make into thick butter milk. Add the grounded masala paste, turmeric to the buttermilk,mix well and set aside.


Put a vessel on stove, add Oil, when it is hot add mustard seeds, when they crackle add curry leaves, hing and fry for 10 sec then add tomato and cook for 2 min then add half cooked veggies and fry for 5 min.




Now add Buttermilk, adjust salt and cook till all veggies are well cooked on medium flame.



Finally add chopped coriander and switch off the stove.




Serve Hot with Rice.

Note:

If you want you can thicken the Pulusu, Take little water, add 1 tsp of rice flour, mix it with out any lumps, add this to pulusu and cook for another 5 min.
